You may remember that a few months ago, Nancy lost her cat Sam to a kidney disease.
Well, last week she called and asked if I would mind if she got the boys a new kitty. I thought this was so sweet that she asked me even before she spoke to the boys. As she said "You will be living here soon, and I want you to be comfortable".
Of course I told her it was OK. A good friend had found a stray kitty and he needed a home. Though he looks solid black, he actually has tiger stripes that are deep black and then a less black body. He is pretty cute and the boys decided that his name would be...READY FOR THIS TRAVIS?...Tucker!
Not Mr. Tucker, the loving cat of Pam and Travis, but just Tucker.
Well, Tucker came over this weekend with Nancy and he felt pretty comfortable here at the apartment.

8 eggs beaten well with some Frank's Hot Sauce added...
After browning the potatoes and sauteing the onions, bell pepper and ham
I remove them from the skillet and add half the eggs and let the set on the bottom...
Then add the rest of the eggs and put the whole thing in the oven
on 350 for about 8 - 10 minutes...
Take it out and let it sit a few minutes...
Then slice and enjoy...YUMMERS!

...I cook frittata the way my Noni did...young, tender zuchini and onion, sauteed, then the eggs on top, with the heat as low as it can possibly go...then, The Flip...no oven...all stove top...and where is your parmaesan cheese, Sir?...

It's funny how you miss a pet - we fully intended not to get another cat after ours died, but Dixie is sat curled up snoozing next to me right now and it's comforting to have him here.
Tucker is CUTE! Cats are great.

I have been away much to long! A ring, a cat, and a delicious looking fritatta! ALL in one post!
Tucker is just precious. God Bless Nancy for saving him. I have a new kitten also that I adopted in November. I just put her photo on my blog a few minutes ago. She is a dilute tortie. Her name is Emma Grace. I love cats, they are so easy. Tucker's color or absense of it, is gorgeous! I can see the darker lines.
So, who is moving where? And an engagement also? I knew it right from the beginning that you two were perfect. :-) I am so happy for the both of you. Sending Hugs!
