Y'all know that I have been getting into the cooking a lot lately, the better to feed ideas for my food blog MANGIA Y'ALL, and because....well HECK-A-DOODLE, me loves to spend time in the kitchen with Nancy creating delicious meals.

This weeks featured dish is a creation that took place last Friday and earned the name "Pollo Tesoro".

This is the dish, simmering away in the pan just before it was served. The slices of Red Bell Pepper leaping off the page in a brilliant RED! For the full recipe, take a seat at the table over at MANGIA Y'ALL.

The sexy Amber Benson is best known for her role as Tara Maclay on the TV series Buffy the Vampire Slayer.

Tara is introduced in the fourth season as a romantic interest for one of the show’s leads, Willow Rosenberg (played by Alyson Hannigan) and thus was part of one of television’s first lesbian couples to include a series’ major character and the only to include two witches (insert your Ellen DeGeneres/Portia de Rossi joke here.)

Amber has since written several novels and comic books, her latest titled Death’s Daughter.

Renowned psychotherapist Dr. Robi Ludwig is taking a night off from helping fix relationships and getting inside the mind of wacky celebs and deranged killers to host a fund-raiser for India’s underprivileged children.

She’ll be by to tell us about India Unplugged, a benefit event that will be held in New York on Thursday, April 16, 2009. The evening, organized in association with CRY - Child Rights and You America Inc., a US non-profit organization, will feature the sublime photography of seasoned and award winning photographer, Glenn Losack MD.

We’ll also be sure to get her read on Rhianna, Octomom and
any other story making headlines today.

    If you remember Amber from her character in Buffy she was the sweet innocent look about her, she's come a long way since. :)
